WILD RICE-RAISIN-PECAN SALAD

2 c. raw wild rice

Wash well in strainer under running water, then bring to boil and boil 5 minutes. Drain and put on fresh water - simmer until all rice "pops" (this varies according to quality of rice). Drain rice and add:

1 (15 oz.) box white raisins
1/4 c. good quality olive oil
6 oz. can concentrated orange juice, NOT DILUTED
Grated rind and juice of 3 lg. oranges
Grated fresh ginger (a root about 2 x 1 inch), grate fine
1 (4 1/2 oz.) bag pecans, break in pieces
2 green onions, chopped very fine

Mix all ingredients together and refrigerate - this keeps well for several days. If the salad seems a bit dry, add a little more orange juice. If you do not have fresh ginger root, you might try adding 1/2 teaspoon of ground ginger - then taste, and add a little bit more if needed. The fresh ginger root really does add a lot of "zing" to the mixture, however.
